2009 Elgin Sauvignon Blanc
Origin: All grapes for this wine are sourced from selected growers in the beautiful Elgin valley.
Colour: Very pale lemon which will deepen slightly with cellaring.
Bouquet: Cut grass with hints of crisp green apples and asparagus.
Taste: Very fresh palate with green apple undertones and a typical Elgin acid.
Aftertaste: Rounded off with a racy vibrant finish, leading onto to enduring fruits.
Grape Variety: 100% Sauvignon Blanc
Maturation Potential: Although Sauvignon Blanc is often made to be drunk young, this example does have an aging potential of at least five years. One will be rewarded as the primary fruit flavours concentrate and develop.
Aging/Fermentation: The wine was fermented at 14 °C and then left on the gross lees for a further 6 months. The wine was released after 3 months in bottle
